This recipe is a variation on Oaty Ginger Crunch found on the Cloudy Kitchen food blog.
Christine made this recipe as a challenge to use black treacle in a new way. Don’t let the word “fudge” in the name fool you. It doesn’t have any cocoa or chocolate in the recipe but the texture and color is very fudge like. It even tastes a bit like fudge. Black treacle combined with the warm ginger spice makes it feel and tastes very much like a fudgy Christmas treat you would share with your neighbors.
You may have to put in a little extra effort to locate black treacle (as it’s not a staple in American grocery stores. We assume one can acquire it at any corner mart in England) but it is worth it. We found black treacle at our local gourmet food and kitchen store.
Crunchy Oat Treacle Fudge
Ingredients
Base
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp salt
- 2 tsp ground ginger
- 1 1/2 cups brown sugar
- 1 1/2 cups rolled (old fashioned) oats
- 8 oz butter
- 3.2 oz black treacle
- 1 tsp vanilla extract
Topping
- 4.8 oz butter
- 4.4 oz black treacle
- 1 Tbs ground ginger
- 2 2/3 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preaheat oven to 350. Grease a 9"x9" tin and line with twopieces of parchment paper so that there is paper sticking out of the tin on all sides, forming a "sling".
- In a large bowl, sift together the flour, baking powder, salt, and ground ginger. Add the brown sugar and rolled oats. Mix well to combine.
- In a small pot, melt together the butter, treacle and vanilla. Add to the dry ingredients and mix well. Press the mixture into the tin and bake for 25-30 minutes, until lightly browned on the edges. Five minutes before the base is done, prepare the topping.
- For the topping: add all the Topping ingredients to a medium pot in the order listed. Heat over low heat, stirring constantly, until smooth. Pour over the hot base and leave to set at room temperature until set.
- Slice into pieces with a hot knife. Store in an airtight container. Can be kept in the fridge but bring to room temperature before eating.
This sounds good and I think you could use molasses instead of the treacle.
